INGREDIENTS
1 tbsp of vegetable oil
1 ½ tbsp of butter
150g of peas
180g of asparagus
150g of finely sliced leeks
200ml of creme fraiche
80g of fresh/ frozen brood beans
350g of tagliatelle or spaghetti
Finely chopped mint and parsley
Flaked parmesan cheese
METHOD
Step 1:
Steaming the Beans
Steam the beans tender over a casserole of boiling water.
Next, boil the pasta. While draining, you can drizzle some oil so they don’t stick.
Step 2:
Fry the leeks
In your favourite pan, sauté the leeks for 3-4 minutes then add the creme fraise while stirring gently.
Next, add the herbs then add a few drops of water. NB: It can be that of the pasta water.
Step 3:
Serving
Now add the pasta, spice it up with pepper and salt. Don’t let it overcook.
You can opt to drizzle the olive oil and cheese immediately, or while enjoying your meal.
